Weight Loss Recipe Low-fat raspberry & orange friands
Ingredients:
- Melted reduced-fat dairy
- spread, to grease
- 75g (1/2 cup) plain flour
- 75g (1/2 cup) self-raising flour
- 125g (3/4 cup) icing sugar mixture
- 1 x 100g pkt almond meal
- 5 egg whites
- 1 x 140g container apple fruit puree (Goulburn Valley brand)
- 30g reduced-fat dairy spread, melted
- 2 teaspoons finely grated orange rind
- 100g fresh or thawed frozen raspberries
- Icing sugar mixture, extra, to dust
Instructions:
- Preheat oven to 200°C. Brush ten 125ml (1/2-cup) capacity oval friand pans with melted dairy spread to lightly grease. Place on a baking tray.
- Sift the combined flours and icing sugar into a large bowl. Stir in the almond meal.
- Use an electric beater to whisk the egg whites in a clean, dry bowl until soft peaks form. Add half the egg whites, apple puree, melted dairy spread and orange rind to the flour mixture and use a large metal spoon to fold until just combined. Repeat with the remaining egg whites, apple puree, melted dairy spread and orange rind. Gently fold in the raspberries.
- Spoon mixture evenly among prepared friand pans. Bake in preheated oven for 25 minutes or until a skewer inserted into the centres of the friands comes out clean. Remove from oven. Set aside in the pans for 5 minutes before turning onto a wire rack to cool. Lightly dust with extra icing sugar to serve.
