Weight Loss Recipe Low-fat raspberry & orange friands

Ingredients:


  • Melted reduced-fat dairy
  • spread, to grease
  • 75g (1/2 cup) plain flour
  • 75g (1/2 cup) self-raising flour
  • 125g (3/4 cup) icing sugar mixture
  • 1 x 100g pkt almond meal
  • 5 egg whites
  • 1 x 140g container apple fruit puree (Goulburn Valley brand)
  • 30g reduced-fat dairy spread, melted
  • 2 teaspoons finely grated orange rind
  • 100g fresh or thawed frozen raspberries
  • Icing sugar mixture, extra, to dust


Instructions:


  1. Preheat oven to 200°C. Brush ten 125ml (1/2-cup) capacity oval friand pans with melted dairy spread to lightly grease. Place on a baking tray.
  2. Sift the combined flours and icing sugar into a large bowl. Stir in the almond meal.
  3. Use an electric beater to whisk the egg whites in a clean, dry bowl until soft peaks form. Add half the egg whites, apple puree, melted dairy spread and orange rind to the flour mixture and use a large metal spoon to fold until just combined. Repeat with the remaining egg whites, apple puree, melted dairy spread and orange rind. Gently fold in the raspberries.
  4. Spoon mixture evenly among prepared friand pans. Bake in preheated oven for 25 minutes or until a skewer inserted into the centres of the friands comes out clean. Remove from oven. Set aside in the pans for 5 minutes before turning onto a wire rack to cool. Lightly dust with extra icing sugar to serve.
